I had to change some of the original ingredients as I didn’t have a block of coconut milk in, I also added diced peppers and chicken thighs because they needed using up. I also had to use sushi ginger because I don’t have fresh ginger! Very tasty and quick to make!

- 4 chicken thighs (boneless and diced)
- 1 onion diced
- 3 cloves garlic diced
- 1 knob grated ginger
- 1 tin tomatoes
- 1 heaped tbsp of medium curry powder
- 1 tsp cumin
- 1 tin chickpeas drained
- 1 handful dedicated coconut
- Coconut oil
- Half a chopped pepper
- 1 whole red chilli
- 2 heaped tbsp of plain yogurt
- 1 tin pineapple
- Salt and pepper to taste
- To garnish (optional)
- Handful desiccated coconut toasted
- 2 tbsp toasted pineapple
- Tsp yogurt
- Coriander (fresh)

- In a small frying pan toast the dedicated coconut
- And then pineapple, set to one side for later
- Using a large pan, heat it on a medium high heat, add the oil then the onion and garlic, stir until translucent.
- Meanwhile prepare the chicken, then throw that in.
- Make a space in the pan throw in the spices then warm them through!
- Stir well, add in the whole chilli then the chopped tomatoes.
- Throw in the chickpeas, peppers, desiccated d coconut and pineapple. If it’s dry add a splash of water! Stir and let simmer until the peppers are soft. (I like mine slightly crunchy for texture)
- Next add some yogurt depending on how hot you like the curry ! Stir well! Adjust the seasoning and serve !
- I topped mine with extra yogurt, toasted desiccated coconut and pineapple! Served with basmati rice and homemade coconut flatbreads! Enjoy
